Not only do these bars taste amazing, but they’re also vegan, gluten-free, and low in sugar. Plus, they have a delightful nutty and coconut flavor that will leave your taste buds craving for more. The best part? They’ll keep for several weeks in an airtight container—if they last that long!
Now, let’s dive into the deliciousness of these Coco-Nutty Snack Bars:
Ingredients:
- 1 cup (125 g) chopped pecans or almonds
- ⅔ cup (66 g) unsweetened shredded coconut
- ¼ cup (36 g) pumpkin seeds
- ¼ cup (36 g) chia or flaxseed (ground)
- ¼ tsp Himalayan salt
- 1 tbsp coconut sugar
- 2 tbsp melted coconut oil
- 1-2 tbsp natural nut butter (peanut, almond, or your favorite)
- 3 tbsp honey or maple syrup
Instructions:
- Preheat your oven to 325°F (162ºC) and line an 8-inch (20 cm) square pan with parchment paper.
- In a large bowl, combine the chopped pecans or almonds, unsweetened shredded coconut, pumpkin seeds, chia or flaxseed (ground), and Himalayan salt. Mix these dry ingredients together thoroughly.
- In a separate bowl, whisk together the melted coconut oil, natural nut butter, honey or maple syrup, and coconut sugar until you have a smooth, sticky mixture.
- Pour the wet mixture over the dry ingredients in the large bowl. Stir everything together until well combined. The resulting “batter” will be sticky and somewhat challenging to work with, but don’t worry; it’s perfectly normal.
- Transfer this mixture into your prepared baking pan. Using a rubber spatula, press the mixture down firmly to create an even layer that covers the bottom of the pan.
- Bake in the preheated oven for about 25 minutes or until the edges turn golden brown.
- Once done, allow the bars to cool in the pan for approximately 45 minutes. Afterward, slice them into 16 bars. Carefully remove the bars from the pan and let them cool for an additional 30 minutes on a cooling rack.
